Mother's Day

I am going to be honest and brag....my mom...she is HOTT and even better she is the best mom in the entire universe! If I become half the mother she has been to me I am totally fine with it!  (NO I AM NOT PREGGERS)  My mom and I share such a special relationship. She is my mom, my sister and my very best friend! I'm so pumped that I have her genes too...I mean Dave is in luck if I look like her in the future :)

These Are A Few of My Favorite Things....

Just a little post about some of my favorite things lately!




This pretty box showed up on my desk yesterday!  I ordered the Black Matte ones from Nordstrom...could be the only time I wished it would rain!



I know I can't believe it either but I actually have peonies growing in my yard that I planted all by myself!  I already cut them and have them in a vase in the house just in case this NEVER happens again!

I made these amazing Skinny "Bang Bang" Shrimp Tacos for dinner the other night with mexi rice and mashed cauliflower. OMG so good and so not bad for you!  I saw the recipe on one of my favorite sites, Skinny Taste. Below is their recipe.  I added some garlic powder and onion powder to the corn starch as well.  I also served them on Corn Tortillas with broccoli slaw instead of cabbage and scallions.  


For the Shrimp:
  • 1 lb large shrimp, shelled and deveined (weight after peeled)
  • 2 tsp cornstarch
  • 1 tsp canola oil
  • 3 cups shredded iceberg lettuce
  • 1 cup shredded purple cabbage
  • 4 tbsp scallions, chopped

Directions:

In a medium bowl, combine mayonnaise, Thai sweet chili sauce and Sriracha. Set aside.
Combine lettuce and cabbage and divide between four plates. Set aside. 

Coat shrimp with cornstarch, mixing well with your hands.


Heat a large skillet or wok on high heat, when hot add oil. When oil is hot add the shrimp to hot pan and cook tossing a few times until cooked through, about 3 minutes.Remove from pan and combine with the sauce coating well.

Self-Promoted Post :)

Dave and I are movie stars! HAHA  Well video stars I guess!  Our wedding was used for Krystal Keith's first music video, "Daddy Dance With Me".  Let me say this is so awesome and if you are a girl that has shared or is going to share a "father-daughter dance" you are so going to cry when you see this video.  I mean I am a tad bit biased because it is my dad and I but this song is super touching.  Yes, Krystal is Toby's daughter (as in Toby Keith) and I have known her for a while now.  She was actually an intern here and let me up the elevator for my job interview back in 2007. She has become a very dear dear friend of mine and I am honored to be a part of this video!  Oh and did I mention she can sing???  She has a new EP on iTunes that you can listen to here.




By the way the video has been viewed over 660,000 times!! That is CRAZY! So check it out and check her out!

Long Time No Blog!

Yet again I am failing my weekly blog update!!  Life has been a tad bit crazy but Ill fill you in!  Last weekend I went to Las Vegas for the ACM's!  It was a blast and since I love all the ladies I work with it was even more fabulous!  Plus I won $80.00 on this little gem!! I found it very fitting!

Fast forward to the end of last week...it was one of my great friends 30th birthday and we celebrated at Etch  which is downtown Nashville!

This was by far one of the best dinners I have EVER had in Nashville...not to mention we had fabulous company but the food was UNREAL!!

We ordered the Brussels Sprouts, Shrimp and Filo and Duck Confit as Appetizers.  They were all amazing!  I ordered the Pork Tenderloin for dinner....it was outstanding!  I highly recommend this place but you must make a reservation!!!

Friday...Friday...

Thank heavens it is Friday, however it is a rainy gross Friday.  I was needing a little blog inspiration for today and I found it at lunch!  Two of my lovely co-workers and I went to BLVD. for lunch today!  This restaurant is the old Cha Cha that used to be a tapas bar on Belmont Blvd...hence the name of course!  It has a great atmosphere and is know for their different variations of FRENCH FRIES!! Yes, my all time favorite food!


You can check out their menu on their website!  I had the brussels sprout salad and an order of truffle oil and chive fries.  I would totally have them both again!  My co-workers ordered the burger and the chicken salad melt which also were very tasty.  I have to say I was disappointed that they didn't serve bread at lunch.  I had heard such wonderful things about the waffles and pretzels they serve with the meals at dinner....oh well, guess that means I will have to go back for happy hour!!






I never drink Cokes but oh this one in a bottle looked sooooooooo good! It was perfect!

Where is Spring?

So today is the first day of Spring in Nashville but it sure does NOT feel like it!  I sported this Gap Neon Pink sweater trying to feel a little bit like Spring today!



Speaking of Spring...Let's talk tan...spray tan.  This girl does not tan in the tanning bed!  Believe me I wish I could because I love it but laying in a cancer coffin is not my style.  I do however LOVE spray tanning!  Yes, there have been some fun studies about how the fumes are bad for you, so I totally try to hold my breath the whole time I am in the booth.  Good thing no one can see me in there! Crazy! Sometimes when I don't have time to go spray tan and need a tan ASAP I go to the products below.

I received these tan towels in my Birchbox one month and LOVE them!  They don't streak and they work immediately.

I also recently went blonde again ya know cause it is Spring and all and I found this awesome YouTube video on another new curling technique.  I have to say it is AWESOME!!  It totally looks natural and you can wear it for two days!  I promise next time I do it I will take photos :)




This weekend I am heading to Lexington to hang out with one of my besties, Rachel!  We have been friends forever and she loves Lululemon just as much as I do!

Shop. Eat. Repeat.

Attention Shoppers!  My best friend Kari is having a closet sale!  Things are going fast!  She has designer glasses, shoes, jeans, dresses....Just check it out!



Last night Dave and I went to Lockeland Table in Nashville with some fabulous coworkers/friends!  It was one of the best meals I have had!!


We started off with a Cheese Plate 



We also had Oysters and "The Pig" Pizza as apps!  There were 6 of us...but we still had so much food!




Then this is what everyone had for dinner!  I had the shrimp dish!  It has Scallops instead of Grouper! OMG it was unreal!  



Of course we had Dessert as well!  Anything with Nashville chocolate Olive & Sinclair is a win with me but when you add it to my all time favorite, CHOCOLATE CHIP COOKIE!


This is what the bar looked like!  I had the Dragonfly to drink which was a mix between sweet, crisp and very refreshing!



I highly recommend dinner here! Make sure to make a reservation!
