Zoodle Pesto Pasta with Chicken

Ok so Dave and I ate awful this weekend, even though we got our workout on, we still had ice cream and cake on Sunday. Oh and Friday night we had steaks and cake...and Saturday was a disaster as well.  So needless to say, I was needing some veggies yesterday!  I am not sure if you have ever made Zoodles but they are Zucchini in Noodle form.  I replace them for spaghetti!


I totally made this recipe up and was super impressed with how it turned out!

Ingredients

Chicken
2 Boneless Chicken Breasts
10-12 Cherry Tomatoes
1 T Olive Oil
Italian Spices- I used the dipping spices that you usually put in Olive Oil for bread dipping, but just regular Italian Spice would work fine.
Salt and Pepper

Preheat Oven to 375.  Drizzle Olive Oil in a glass pan.  Place chicken on top.  Season chicken on both sides with Italian Spices, salt and pepper.  Add tomatoes whole.  Bake Chicken until cooked through, mine took about 25 minutes.  Shred chicken.  I like to do this in my Kitchen Aide mixer with the white paddle.  It is almost like magic, how great and quickly it shreds chicken. 

Zoodles
3 Medium Zucchini
1 T Olive Oil
2 t salt
2 T Pesto

Julianne zucchini with a mandolin or you can use a sprializer.  Sprinkle salt over zucchini in a colander so some of the water releases from the zucchini.   I am jealous if you have one of those. Place skillet over medium-high heat and add olive oil.  Add zucchini and saute for 2-3 minutes, until zucchini is hot but not mushy.  

Add Chicken, Tomatoes and Zoodles to a large bowl and stir in pesto until well coated.  Serve immediately with fresh shredded parmesan cheese.

Well guess what?!  Snow Day AGAIN in Nashvegas!  I love snow but I would totally be ok with not seeing it anymore this year.

So I don't really ever break out but lately I have had a few places on my chin that have been driving me crazy.  I researched and when you break out in that area it is usually due to stress or too much sugar.  Yea, I believe that!  This stuff is AMAZING! It is almost like calamine lotion for your blemishes.  You literally use a Q-Tip, dip it in the pink solution and dab it on your face.  Then you sleep in it and like magic, your blemish is gone!  Now, you DO NOT look cute or sexy with pink dots on your face...my hubby asked me where my retainer was before we went to bed.  So I wouldn't advise a selfie!





Last weekend, Dave and I went to City Winery for Brunch.  I purchased a coupon on Travelzoo for $29.00.  It included 2 brunch drinks and 2 entrees.  The drinks are so great!  I started with a Hopped Mimosa which had grapefruit bitters and it was outstanding.  My second drink was the Sobro Blues which was prosecco, blueberry liqueur, lemon juice and a fresh giant blackberry!

We also had the biscuit beignets that were phenomenal.  We ordered them with apple butter instead of the tomato jam they come with. 

I sadly didn't take a photo of our entrees, because I was starving and forgot.  Dave got the basic City Winery Breakfast that came with Eggs, Bacon, Sausage, Potatoes and Toast.  I had the Meat Fritatta that was just perfect with Sausage, Bacon, Ham and Feta.  It was just the right size!

I highly recommend trying it out and make sure to get the coupon on Travelzoo!

FITNESS FRIDAY!

This blog is called Sweat & Sequins after all, and I haven't posted many fitness posts lately.  I was asked earlier this week by a sweet friend who works at Lululemon to do a shoot at SHED Group Fitness.  I was so excited for many reasons.  I like to see myself as fit, but I am not in "photoshoot" shape for sure.  So after eating lettuce for a few days and working my butt off at SHED, I did feel a little more "photoshoot" ready.

Emma met me at SHED with some awesome Lulu clothes, and we got started!  I loved how the pictures turned out and I am not in for full body shots...EVER. 



I love the If Your Lucky Pant!  There were so comfy and didn't fall down during the workout!  The mesh legs are the best, oh and I loved how my butt looked in them!  Let's get serious ladies, that IS important!

I also have on the Light Speed Long Sleeve in this photo.  It's so fabulous that it is only available in-store.  Go check it out at the Hill Center Lululemon and ask for Emma.  She is even more fabulous!!



The Row Machines at SHED are my favorite.  I used to view rowing as an easy workout, because of course I was doing it all wrong!  These are mean machines, but so fun.

I am wearing the Run: Speed Shorts in this photo.  I am normally not into shorts, I did love these.  I was super impressed on how they fit.




Stretching it out!


These are the ropes!  They will totally fool you.  If you think lifting ropes doesn't sound like much of a workout, you are very wrong.  This is great for your arms and I can really tell a change after using them!



This Crossback Tank is pure perfection! It has a perfect amount of support and is super comfy!! Plus I love how it made my shoulders look!  It paired very well with the  Run: Speed Shorts.


These are box jumps!  For some strange reason,  I really like these!  If you are lucky, and you decide to give SHED a try, maybe you will get to do a box jump burpee. Fun Times!

Hope You Have A Stylish Day

Hope your day has started out great!  It is snowy in Nashville, yet again but I think this may be the end of it for a while!

Kale, Potato and Sausage Soup

This weather is crazy in Nashville.  I am going stir crazy in this house.  The snow is so pretty, don't get me wrong but the ice underneath is not cool.  We went to our neighbor's house for dinner last night and I could barely even walk across the front year because it was a solid sheet of ice.  Dave braved the roads this morning to get to work...not sure if he really had to go or if he couldn't bare another day working from home with his fabulous wife! haha!

Anyway, if you are trapped inside this is a great winter recipe.



Ingredients

1 lb Italian Chicken or Turkey Sausage
1 lb Red Potatoes (cut and quartered)
3 Handfuls of Kale
1 sweet onion (chopped)
1/2 tsp. basil
1/2 tsp. oregano
1 Bay Leaf ( I didn't have one so I didn't use one)
3 Cloves of Garlic
5 Cups of Chicken Broth
1/2 tsp. Red Pepper Flakes (Optional_
1/4 cup Heavy Cream ( I used skim milk)
Salt and Pepper
Parmesan Cheese

Directions

Cook Italian Sausage until brown.  Add spices, onions, garlic and cook until you can see through the onions.  Add salt and pepper to taste.  Stir in Chicken Broth and Bay Leaf and bring to a boil.  Add potatoes and cook until tender.  Stir in Kale until it is tender. Stir in heavy cream or milk and stir for a minute.  Serve immediately and top with parmesan cheese. 

I served with a grilled cheese and it was amazing!

Best Curling Iron Ever

Happy Snow Day #2!  This Nashville ice storm is a little crazy.  Our back door was completely frozen shut this morning.  Another day in my PJ's is fine with me....tomorrow however, I may go crazy.  Anyway,  I have found the Best Curling Iron Ever, well my friend Kate found it for me.  She bought one and they sent her an extra one for free.  She knows my obsession with curling irons, so this was the perfect gift.   It is called the InStyler Tulip.  There are a lot of different types of InStylers so make sure if you decide to order this you get the Tulip and it looks like the below.



It is literally so easy to use and the best part is your hair looks perfect.  There are several different settings.  You can create tight curls that will last for days all the way to fun beach waves.  All of these hair styles I did with the InStyler Tulip.

BIG NEWS!!

Life has been pretty interesting lately, which is why I haven't been around much!  I thought a lot about making this decision, and I am really excited to share with you that I am now a Stella & Dot Stylist!
