A Little Bit of This and a Little Bit of That!

Saturday Breakfast

This weekend was pretty relaxing!  Saturday morning I actually cooked breakfast....and it wasn't disgusting waffles!  I made omelets and they were HEALTHY. 

This is not mine but I forgot to take pics!

Ingredients-
1 egg beater cup
Spinach
Turkey Bacon
Fat Free Colby Jack Cheese


It was so yummy...Dave even loved it....

I have to say I am SO glad this wedding decision has been made.  Since there are not a lot of the same stores in my hometown as their are in Nashville, it was a little stressful trying to decide where to register.  Dave wanted to register wherever he could shoot the gun!  We decided on:














I LOVE Crate&Barrel and even though we do not have one near by, I know a lot of people would rather shop online these days.  We have a Bed, Bath and Beyond where I am from and the Macy's staff was so wonderful!  We are not completely done but plan on finishing up this weekend.

INSANE

OK, So I am going to do it!  I am going to order INSANITY.  I hear it is supposed to be a really good workout.  I love going to the gym, and would much rather work out there than at home.  However, I want to up my workouts towards the wedding and maybe do INSANITY in the morning and a kickboxing class at night.  One of my favorite instructors, Nikole, said it was a great workout.  Her class is super hard and amazing, so I know if she said it is a great workout then it must be!  Don't worry Nikole, I will still be coming to your class!



After I do it for a few weeks, I will let you know what I think!!!

A Few New Dishes!

Parmesean Garlic Salmon

Well I have to say this dish was so very good, but an adventure to say the least.  I had Monday off and took some time to sit down with my recipe books to find some healthy things to make for the next few weeks and plan my grocery list.  I notice that if I do not go with a list I come home with the exact same thing everytime.

Skim Milk
Activia Yogurt
Fruit
Frozen Veggies
Lean Cuisines
Hummus
Pita Chips
Wine

Hmmm...what is missing?? PROTIEN! 

So, long story short I pre-heated the oven to 450 and prepared the salmon according to the recipe.  I went to put the salmon in the over and the over was still cold.  Our oven DIED!!  After my small breakdown, Dave found that we could pan sear the salmon.  It was a few extra calories because we had to add more olive oil bit it was SO GOOD.  I served it with some sauted asparagus.  Here is the recipe!

1 lb. Fresh Salmon ( I bought a fresh slice at Kroger and cut it in half, it was A LOT of salmon)
3 tablespoons Parmesean Cheese
1 Garlic Clove
1/2 tsp Worcestershire Sauce
1/2 Cup Low Fat Mayo
2 Tsp Chopped Green Onions



Preheat Oven to 450.  I pan seared mine however.  3 minutes skin side down, 5 minutes skin side up! Turned out perfect!  Mix all the other ingredients together besides salmon and place on top on Salmon and bake.  If you are going to pan sear it, cook the salmon first then mixture on top and broil for 5 minutes or until cheese bubbles.  Serve with sauteed or baked asparagus and white wine!

Another quick dinner I made the other night was a mini pita pizza.  I just spread tomato sauce on a whole wheat pita with a dash of basil and italian seasoning.  I added some lowfat mozzerella chesse and turkey pepperoni.  I then broiled it for about 3 minutes until the cheese was melted!

Love Long Weekends!

Last week was CRAZY!  I went to Detroit to take Carter's Chord to sing the National Anthem at the Detroit Pistons game.  I wasn't really even gone for 24 hours.  We had such a good time though and they did such a great job.  They have a new single out called A Little Less Comfortable.  You can check them out at http://www.carterschord.com/.   Such amazingly talented artists!  We also went to this fabulous restaurant called Kona Grill which was amazing.  They do not have one near Nashville unfortunately.

Dave and I were supposed to go to Kentucky this weekend to see my family.  However, Dave didn't get off work until 8:30 on Friday so we didn't get to go. I cooked jambalya Friday night with Turkey Sausage and chicken.  It was so easy and SO GOOD.



Ingredients-
1 box low sodium Zatarain's Jambalaya Mix
1/2 Turkey Sausage Link
2 small chicken breasts.

Directions-
Bring 2 1/2 cups of water to a boil.  Add jambalaya mix and meat (precooked).  Let simmer covered for 25 minutes.  SO EASY and so Yummy!

Saturday morning Dave wanted waffles.  Waffles really aren't on the pre-wedding diet.  I had bought some whole wheat waffle mix to try and we had sugar free syrup as well.  I mixed the mix with a little oil, egg, milk and water.




I used our new waffle maker that Dave's parents gave us.  The waffles looked so pretty I thought!


However,  they were a huge FAIL!  They were super grainy with no taste.  I do not recommend this mix.  Poor Dave ate them to be nice I think, but I wouldn't even give mine to the dog. 

After the bad breakfast experience we decided to go for a 6 mile hike in Percy Warner Park.  It was kind of cool outside but still a nice day.



Dave has to be a Cats fan by default!


After our hike we went to one of my favorite places to eat in Nashville, Bread & Company.  Check out the salad I ordered, pulled Turkey, cucumbers, artichokes, sun-dried tomatoes and their amazing balsamic vinaigrette.  I didn't eat the bread but I so wanted to!


Today we went to church at West End Community Church.  We have been going there for the past few months and really love it!  We went for a long walk this afternoon because it was so beautiful outside.  We checked out a new place in Hillsboro Village called Hot & Cold.  It is a local place that makes coffee drinks, ice cream and my favorite Las Paletas.  They are the best Popsicles in the world.  I had a coconut one today dipped in Oliver & Sinclair Chocolate! It was a a little bit of Heaven!  So that was my weekend so far!  I have the day off tomorrow!  I plan on making a trip to the gym 2 times tomorrow to jump start the week, with a pedicure and making a trip to Z Gallerie to look at a few wedding things.

Speaking of wedding, my save the dates are DONE! I cannot wait to get them in!  Kari, my bff and maid of honor made them!  LOVE THEM!!!!

Pink Is In The Air!

Valentine's Day

I have to say I had a wonderful Valentine's Day!  My mom arranged to get cupcakes to me even though she lives in another state.  I had 3 texts wishing me Happy V Day before I got up at 6:00am this morning.  Dave's mom delievered a gift to my office and Trace Adkins sent boxes of girl scout cookies.   Dave brought me flowers to work and took me to dinner.  I am so grateful for such amazing family and incredible husband to be. I also started my day with a great run with one of my BFF's Kate.  She was wearing red even. :)



Mom sent me Gigi's cupcakes.  The flavors were Wedding Cake (how fitting), Princess Cupcake (Strawberry w/cream cheese frosting), Dutch Chocolate and a Grasshopper (mint chocolate chip).  I had a half of one tonight....Valentine's Day I have NO CONTROL.  If you havenet been there you must GO!


Jennifer's Baby Shower

So I have been planning a great friends baby shower since the first of the year and it finally took place yesterday!  I have to say it was amazing.  With the help of some wonderful friends and Dave's mom the shower was a huge PINK success!  I made sure to take plenty of photos to share!

Jen will be naming her bundle of joy Emma Katherine so I painted an E with pink glitter polka dots and added some bling!  I also talked to her husband Eli about getting me a picture of the ultrasound to make a picture out of.  I basically made a scrapbook page and framed it.  All the supplies I bought at Michael's.

I found a fabulous baby boutique called Lil' Cupcake on Etsy.  She made the custom order. I wanted the paci and tutu to match perfectly.  I HIGHLY suggest this store!


Are these not the cutest bibs?  We all loved the Single one!  They were puchased at Babies R Us.

This outfit was ADORABLE.  Ruffles all over!  Also the boas in the vase on the table was from Jen's Bachelorette Party. A nice touch :)


 Planning a little girl babyshower during Feb. is AWESOME because everything is pink!  On the cake table their were pink and white M&M's and iced animal crackers.  The cake was fresh strawberry with cream cheese frosting from Nashville Bakery Sweet and Sassy.




I had everyone bring their favorite childhood book for Baby Emma.  The pig on the table is from Home Goods and was my polka dot inspiration for the shower.


I purchased the invitations off www.tinyprints.com They were great!


This was the guest book table.  I made a sheet with the invitation on it for everyone to sign.  It was a scrapbook sheet for her to use in Emma's scrapbook.  The stroller was full of moss and we found these cute pink roses in Judy's house.  Thank goodness for her and all her help!


I found the favors at Target.  They are loofahs with pink Hershey Kisses in bags wrapped with pink ribbon.  What girl doesn't want a pink loofah?


We played a cute game where everyone cut ribbon to where they thought their ribbon could fit perfectly around Jen's belly.  Dave's mom cut hers a little big, but it made a cute pink bow!

The menu for the shower consisted of baked brie, pigs in a blanket, fruit, veggies, spinach dip, mini sandwhiches, fruit tea and fluffy pink punch.

The shower couldn't of been such a success without all the help from Judy,Jamie, Bonnie, Lindsay and Cassie.  Thanks so much girls.  Next Up Bonnie's shower for little boy Jack.  What can I paint that is blue?

Turkey Meatloaf....YUMMMM

DIN DIN

Dave cooked Turkey Meatloaf Muffins for dinner tonight!  I know I know, doesn't sound that appetizing.  They are SOOOO good!  Just the right serving and very healthy!








Turkey Meatloaf Muffins
1 Box Turkey Flavored Stove Top Stuffing
2 Egg Whites
1lb Ground Turkey
1 Cup of water

Preheat oven to 350.  Mix all ingredients together.  Spoon into the giant muffin pans.  Ours hold 6 muffins.  Bake 35-40 minutes.  Serve with Ketchup! Yummy Yummy Goodness!

We had steamed broccoli with them!  They are just as good leftover for lunch the next day too.




I have a confession.  I broke down and bought Edy's Thin Mint Girl Scout Cookie Ice Cream the other night at the grocery store.  I have not purchased any Girl Scout cookies so it only seemed fair that I buy this!  On the side it says 1/2 the calories and fat which made it that much more appealing . Each 1/2 cup serving of Edy's Slow Churned Thin Mint Cookie Ice Cream provides 120 calories and 4.5 grams of fat. 

As wedding time gets closer I will NOT eat this, however if i deprive myslef now I know I will go crazy and eat everything in site right before the wedding...defeating the whole purpose of slimming down before
9-10-11.

READING

When I have a few free minutes I LOVE reading Women's Health....even though a few things freak me out in there....like increase of Cancer for using your cell phone as an alarm and all the bad things in non-organic milk....I am super gullable.  I will let you know what freaky things are in this month's copy.



Dave and I have started doing a nightly devotional before bed from a book called The Love Dare.  It is a couples devotional book based on the movie Fireproof.  I highly reccomend it! It is a super easy read and great conversation piece!  Click Here to get it on Amazon.



BRIDESMAIDS

On my last post I picked some dresses out from Nordstrom.  One of my best friends and bridesmaids, Kate, LOVES Anthropologie and forwarded an email about their wedding line coming out on Valentines's Day!  I want to see what they have so I can make my final decision on dresses for my beautiful girls!




Ok so lets all pray for no more snow! So over it, so is my car and my poor Coach snow boots have been worn out this year!

Decisions, Decisions, Decisions!

STYLE

So far the hardest part of wedding planning has been bridesmaid dresses!  I really want the girls to be able to wear their dress after the wedding.  I am not very traditional!  I would love if all the girls had a different dress!  I want them to get something they think looks great on them.  I have really pretty friends which makes my wedding party pretty much a group of models.  They could all wear trash bags and still look amazing.  I also do not want them to have to pay a lot of money for a dress they may never wear again.  Here is what I like so far......Pewter/Dark Gray is the color by the way!

I totally just noticed that there are 7 dresses on here and I have 7 bridesmaids! Maybe that means they can all just pick one!! Oh I wish it were that easy.

FOOD

So Sunday is Super Bowl Sunday...I am really looking forward to CHEATING ON MY DIET, the commercials and wearing sweatpants all day!  I am still looking for something to make for the party Dave and I are going to....Here are the options I am looking at...of course I will make them as low calorie as possible....sadly fat free cheese just doesn't taste good!

Buffalo Chicken Cheese Bites
 2 chicken breasts, cooked and shredded



1/2 cup Frank's Red Hot sauce


4 oz. cream cheese, softened


1 1/2 cup sharp cheddar cheese, shredded


a Sprinkle of blue cheese crumbles (about a 1/4 a cup)


a dash of salt, pepper, and garlic salt.


1 cup all-purpose flour


3 eggs, lightly beaten


2 cups bread crumbs


Directions:


1. Preheat oven to 350F. Line a baking sheet with parchment paper or lightly grease; set aside.


2. Place shredded chicken in a medium-sized bowl. Mix in hot sauce, cream cheese, cheddar cheese,blue cheese, salt, pepper and garlic salt, until combined.


3. With a small cookie scoop, scoop mixture out and roll into balls.


4. Place flour, egg, and the bread crumbs in three separate bowls, arranged on the counter for dipping. Roll each ball in the flour, then the egg, then the bread crumbs, until coated well. (Your hands will get messy). Place each ball on the repared baking sheet.


5. Bake for 20-25 minutes, until golden brown. Serve with more Frank's sauce, ranch dressing, or blue cheese.


Makes about 2 dozen cheese bites.


*When short on time, you can use a 12.5 oz can of chicken breast, drained. I use the canned chicken from Costco all the time. It tastes great and is a great time saver.


Jersey Cookie Cake

I made this last year for the Colts/Saints game! Basically formed cookie dough into a jersey and footballs then decorated!  This year it will be green!  GO PACKERS!




A friend and I were texting about calorie counting and food shopping today and she reminded me about this quote that I had forgotten!  It helps me put down the cookie :)
