A Few New Dishes!

Parmesean Garlic Salmon

Well I have to say this dish was so very good, but an adventure to say the least.  I had Monday off and took some time to sit down with my recipe books to find some healthy things to make for the next few weeks and plan my grocery list.  I notice that if I do not go with a list I come home with the exact same thing everytime.

Skim Milk
Activia Yogurt
Fruit
Frozen Veggies
Lean Cuisines
Hummus
Pita Chips
Wine

Hmmm...what is missing?? PROTIEN! 

So, long story short I pre-heated the oven to 450 and prepared the salmon according to the recipe.  I went to put the salmon in the over and the over was still cold.  Our oven DIED!!  After my small breakdown, Dave found that we could pan sear the salmon.  It was a few extra calories because we had to add more olive oil bit it was SO GOOD.  I served it with some sauted asparagus.  Here is the recipe!

1 lb. Fresh Salmon ( I bought a fresh slice at Kroger and cut it in half, it was A LOT of salmon)
3 tablespoons Parmesean Cheese
1 Garlic Clove
1/2 tsp Worcestershire Sauce
1/2 Cup Low Fat Mayo
2 Tsp Chopped Green Onions



Preheat Oven to 450.  I pan seared mine however.  3 minutes skin side down, 5 minutes skin side up! Turned out perfect!  Mix all the other ingredients together besides salmon and place on top on Salmon and bake.  If you are going to pan sear it, cook the salmon first then mixture on top and broil for 5 minutes or until cheese bubbles.  Serve with sauteed or baked asparagus and white wine!

Another quick dinner I made the other night was a mini pita pizza.  I just spread tomato sauce on a whole wheat pita with a dash of basil and italian seasoning.  I added some lowfat mozzerella chesse and turkey pepperoni.  I then broiled it for about 3 minutes until the cheese was melted!
