Random Thought Post

Well the highlight of my day was purchasing the new Britney album!  I went to the gym at 6:00AM and on my way home I went to Target to pick up a copy, to only find out Target doesn't open until 8:00AM.  I went back on my way to work, figuring it was ok for me to be a few minutes late since I was actually BUYING a CD and contributing to the music industry.  I won't get on my soapbox about stealing  music, just don't do it! Anyway, Brit Brit's album is AWESOME! She makes the best workout music!  I listened to it all day in my office! My favorite track is Til' The World Ends!

I also had a shaken iced green tea lemonade (unsweetened) from Starbucks!  It is my new favorite drink!

Last night I was reading Health Magazine and they listed the Top 11 Things It Is Best to Buy Organic!  Honestly, it totally freaked me out!  It is crazy how everything can cause cancer these days.  I have started buying as much organic produce and milk as I can but it is so expensive.  Plus when you eat out how do you know if they washed their lettuce?

For dinner tonight I made Greek Salad.  I marinated 2 chicken breasts in light greek dressing and baked them while Dave and I did an INSANITY workout.  Then I mixed organic lettuce, chopped tomatoes, fat free feta cheese and chopped cucumbers. I added the chicken and more dressing to the lettuce mix and tossed.  It was very good.  I now need something chocolate....hmmmmm

OK last thing, I know I haven't talked wedding so here is a little bit of info. Save the Dates have went out and I have learned that putting together the guest list is by far the hardest part of wedding planning!  My best friend and maid of honor Kari is coming in a few weeks and we are going to meet with the florist along with another amazing bridesmaid of mine Kate!  Flowers are not really my thing, def. one thing that didn't get passed down to me...or my mom either...we both kill flowers really :)  So I will leave you with what I like right now...I am thinking all white.....but I have been known to change my mind!!

Let's Start Over

OK....So I have been MIA lately...so sorry...I have been out of town a lot lately and any other free time I have had has been spent at the gym, wedding planning, looking for houses and with Dave. Also, if you are wondering I changed my blog name. It is now Bling Bling Cupcake Queen.  Not because this blog will not be about cupcakes either.  I love "Bling Bling", I love cupcakes and Queen just rhymed.  There you have it no real meaning but I thought it was cute and catchy! 

I went to NYC a couple weeks ago to take one of our new artists, JT Hodges for a New Media Tour.  The work part was fun and the food was amazing!  I even got a morning run in at Central Park with a good friend, Keriann.

The very next weekend I went to Charleston for Emily's (who is a  really good friend and bridesmaid) bachelorette party!  It was so much fun!!!!!  We ate wonderful food and laid on the beach all day....it was a very relaxing weekend and not to mention Charleston is amazing!

This past weekend a few girls and I threw Emily and Clint a couples shower in Franklin, TN.  We had a taco bar, margaritas and corona. Very Festive besides the crappy weather Nashville gave us this weekend.  Their wedding is in May and will be so beautiful.  Dave and I are in their wedding and can't wait to share that weekend with them!

For their shower I made a Strawberry Cake!! OMG I have to say even if i did make it IT WAS AMAZING! The entire 3 layer cake was gone at the end of the night!!  Here is the recipe!

Sloane's Strawberry Cake- ( I used about 3 different recipes so I can call it mine)

1 Package Plain White Cake Mix ( I like Pillsbury Classic White)

1 Cup Chopped strawberries, with juice

1  Tablespoon of Whole  Milk

1 Package Strawberry Gelatin (3 ounce)

1 Cup Vegetable Oil

4 Eggs

4 Tablespoons All Purpose Flour

1 Tablespoon Sugar

Preheat oven to 350.  Grease and flour 3 round cake pans and set the the side.  Chop strawberries and place in plastic bag.  Use a rolling pin to smash them.  Combine cake mix, milk, eggs, gelatin, flour and sugar.  Then add strawberries and mix with electric mixer until smooth. (about 2-3 minutes)  Divide batter up into 3 cakes pans and bake for 33-35 minutes.

So this was a funny story....I tried to make Strawberry Cream Cheese Frosting 3 times and just could not get it how I wanted it.  I managed to make one batch that was great but was not enough for the whole cake.   I frosted the outside of the cake with Duncan Hines Strawberries and Cream frosting and the middle of the layers with cream cheese frosting.

Cream Cheese Frosting
4 Tablespoons of Butter
1 8oz package of cream cheese
2 1/2 cups of powdered sugar

Mix butter and cream cheese together.  Add powdered sugar and mix until whipped!   

Place sliced strawberries on top of cake.
