Let's Start Over


OK....So I have been MIA lately...so sorry...I have been out of town a lot lately and any other free time I have had has been spent at the gym, wedding planning, looking for houses and with Dave. Also, if you are wondering I changed my blog name. It is now Bling Bling Cupcake Queen.  Not because this blog will not be about cupcakes either.  I love "Bling Bling", I love cupcakes and Queen just rhymed.  There you have it no real meaning but I thought it was cute and catchy! 

I went to NYC a couple weeks ago to take one of our new artists, JT Hodges for a New Media Tour.  The work part was fun and the food was amazing!  I even got a morning run in at Central Park with a good friend, Keriann.

The very next weekend I went to Charleston for Emily's (who is a  really good friend and bridesmaid) bachelorette party!  It was so much fun!!!!!  We ate wonderful food and laid on the beach all day....it was a very relaxing weekend and not to mention Charleston is amazing!

This past weekend a few girls and I threw Emily and Clint a couples shower in Franklin, TN.  We had a taco bar, margaritas and corona. Very Festive besides the crappy weather Nashville gave us this weekend.  Their wedding is in May and will be so beautiful.  Dave and I are in their wedding and can't wait to share that weekend with them!

For their shower I made a Strawberry Cake!! OMG I have to say even if i did make it IT WAS AMAZING! The entire 3 layer cake was gone at the end of the night!!  Here is the recipe!


Sloane's Strawberry Cake- ( I used about 3 different recipes so I can call it mine)

1 Package Plain White Cake Mix ( I like Pillsbury Classic White)


1 Cup Chopped strawberries, with juice

1  Tablespoon of Whole  Milk

1 Package Strawberry Gelatin (3 ounce)

1 Cup Vegetable Oil

4 Eggs

4 Tablespoons All Purpose Flour

1 Tablespoon Sugar


Directions-
Preheat oven to 350.  Grease and flour 3 round cake pans and set the the side.  Chop strawberries and place in plastic bag.  Use a rolling pin to smash them.  Combine cake mix, milk, eggs, gelatin, flour and sugar.  Then add strawberries and mix with electric mixer until smooth. (about 2-3 minutes)  Divide batter up into 3 cakes pans and bake for 33-35 minutes.

Frosting-
So this was a funny story....I tried to make Strawberry Cream Cheese Frosting 3 times and just could not get it how I wanted it.  I managed to make one batch that was great but was not enough for the whole cake.   I frosted the outside of the cake with Duncan Hines Strawberries and Cream frosting and the middle of the layers with cream cheese frosting.

Cream Cheese Frosting
4 Tablespoons of Butter
1 8oz package of cream cheese
2 1/2 cups of powdered sugar

Mix butter and cream cheese together.  Add powdered sugar and mix until whipped!   

Place sliced strawberries on top of cake.
