Monday Night Dinner....

Well sadly Sean picked Catherine. I am just not sure she is as sensitive as he is! She laughed through the whole proposal and he cried!! Hmmm....

Anyway for dinner last night we had Pretzel Encrusted Chicken, Roasted Brussell Sprouts, Arugula and Beet Salad and wine of course!! (Well I had a beer and a glass of wine) Don't Judge!

I added Whole Grain Mustard to the Chicken Recipe this time and just used normal bread crumbs.  I liked it much better this time!


To make these I just used a bag of frozen Brussell Spouts, a little bit of Olive Oil and Salt and Pepper.

Heat the oven to 400 and bake for 20 minutes!  I didn't even cut these in half.  I just baked them directly from frozen and they were perfect!


HELPFUL HINT!  BUY THIS!  
It protects your pan from having to scrub it! SO SO worth it!

Arugula Salad Ingredients

Arugula
Light Balsamic
Pickled Beets
Walnuts

SO GOOD!



I did have this beer last night! Redd's Apple Ale!    It is so good and crisp.  Not as heavy as a normal cider!
