I heart Zoe's Kitchen!

So I am becoming obsessed with Zoe's Kitchen!  It is an amazing healthy restaurant in Green Hills.  I am pretty sure that I have been there at least 10 times this month.  Check out the site to see if there is one in your area!  They also have this awesome app that rewards you with free stuff.  So far this year I have earned free hummus, a free drink, free side and a free piece of cake!  Do yourself a favor and check it out!  Dave even loves Zoe's too because they do have "man" size servings!  I can usually get 2 lunches out of their Greek Salad.  I usually order the chicken greek salad, steak kabobs or a chicken and slaw pita!

Makeup Monday- Parlour 3

So I went to Parlour 3 Salon (the place Carie Underwood goes) and I am obsessed.  There are chandeliers EVERYWHERE!  I went for a makeup application and I was SOOO impressed. Meri Gray  was amazing!  If you ever need a makeup artist I HIGHLY suggest her! Not to mention she was SOOOOO sweet!!!  Click her name to view her bio!

Stir Fry Friday

I finally bought a wok at Home Goods last year, however I haven't used it very much because I always forget I have one.  I was at Trader Joe's and in their produce section that had fresh stir fry veggies.  I am a sucker for almost already prepared meals!  The veggies had snap peas, mushrooms, water chestnuts, broccoli, red peppers, baby corn, onions and I am sure I am missing a lot of others!

Stiry Fry

2 Chicken breasts- cubed
Olive Oil
Trader Joe's Asian Stir Fry Veggie Mix (any veggie mix of your choice is fine)
Low Sodium Soy Sauce
Salt and Pepper to taste

Pour a capful of olive oil in the wok and let it heat up.  Add Chicken and cook all the way through.  Add Veggies and cook.  I added spinach just because I had some that had to be used.  Add Soy Sauce.  I used quite a bit but just add enough to your liking.  Add Salt and Pepper to taste.  You can always serve this over brown rice or noodles.   Dave and I chose to use our calories for cookies later!

Thursday- Try Something New

Of course trying something new for me usually means food......or mascara!  Last weekend Dave and I went to Pinewood Social in Nashville! LOVE LOVE LOVE!  It is such an awesome concept.  It really is all about socializing!!  They have an amazing coffee bar, breakfast, lunch, dinner and brunch.  They also have a bowling alley and a karaoke room.  This summer they are opening a pool and cabanas....I mean I'm not sure I'll be prancing around in my swimsuit there this summer but I mean I always will take a drink in a cabana!

The drink I had...yes i said drink...because if i would of had "drinks" I wouldn't of been able to stand.  The waitress told me the drink I chose was the most popular among the of course I ordered that one.   I was thinking since it was Sparkling it would be some sort of small champagne drink...NOPE! It came in a full on beverage glass....oh it was so good! See ingredients below!

This week I got a new gel manicure with accent nails.  I mean I have done this before just never paid for it!  I chose a pale pink and as the accent a gold glitter...had to get some sparkle in there somehow!

I also purchased another lip gloss at Target this past weekend...I had totally forgotten about Cover Girl's Pink SEQUIN! I used to wear it all the time and I am so glad we finally have gotten back together!!

Key Lime Pound Cake with Key Lime Glaze

Last week was a colleague's birthday and I made her a Key Lime Pound Cake!  It was delicious! So delicious that I completely forgot to take a photo of the end result!

Key Lime Pound Cake

1 C of Butter (Softened, and yes that is 2 sticks, YIKES)
1/2 C of Shortening ( I used the Crisco Stick)
3 Cups of Sugar
6 Large Eggs
3 Cups All Purpose Flour
1/2 tsp of baking powder
1/8 tsp of salt
1 C of milk (I used skim)
1 tsp Vanilla
1 tsp key lime zest ( I bought key limes but you can use regular limes)
1/4 C Key Lime Juice ( I got this by the lemon juice in the juice isle, you can use lime juice if you can't find key lime)

Preheat Oven to 350.  Butter and Flour a bundt pan.  Using a large stand mixer cream together shortening and butter.  Gradually add sugar and beat on a medium speed until fluffy.  Add eggs one at a time and beat each one just until blended.  In a separate bowl mix together flour, baking powder and salt.  Gradually add to butter mixture, alternating between adding milk. Begin and end with flour mixture.  So begin adding a bit of flour mixture, add a little milk, add a little flour, milk, flour, you get the point...just make sure to end with the flour.  Mix just until blended each time.  Stir in key lime zest, key lime juice and vanilla.  Transfer batter into your bundt pan.  Bake an hour and 15 to an hour and 20 minutes.  Make sure the knife comes out clean...Gooey bundt cakes are not good.  Leave cake in pan for 15 minutes to cool.  In the meantime make the Key Lime Glaze (See below).  Turn pan over and carefully tap cake loose on top of a wire rack covered in parchment paper.  This is so you don't get the icing everywhere.  Since I was taking this to the office, I iced it on the cake carrier.  Ice immediately after you take it out of pan.

Key Lime Glaze

1 C powdered sugar
2 TBS key lime juice
1/2 tsp of vanilla

Whisk all together, forming a glaze.  

I also sliced fresh strawberries to serve on top of the cake.

Younique Mascara Review- 3D Fiber Lashes

You may of read last week about all my new favorite mascaras.  Check out the post here if you missed it!   I recently received the Younique mascara in the mail and I LOVE IT!  I will say it takes some getting used to and it take some time.  You have to do one eye at a time so that the fibers stick to the lashes!  I put on 3 coats and I really liked the way it looked!  It really does take some practice though.

Skinny Chicken Parmesan and Cheesy Spaghetti Squash

So I was off work today for the holiday and I have to say it was a fabulous day off.  I went to Barry's this morning with a dear friend that is in town from NYC, went to Juice Nashville, the dermatologist and home for the rest of the day to relax.  Well I relaxed while folding clothes and cleaning the house.   I didn't have a clue what I was going to make for dinner but I had spaghetti squash that I had to cook before it went bad.  Dave is not much on Spaghetti made of spaghetti squash, he would much rather have noodles.  So I came up with Cheesy Spaghetti squash boats and Skinny Chicken Parmesan.

Cheesy Spaghetti Squash Boats


1 Medium Spaghetti Squash
1 Cup of Spaghetti sauce (I love Sweet Tomato Basil)
3/4 cup Shredded Parmesan and Mozzarella Cheese (they have a mixture at Target)

Poke holes with a fork all over the squash.  Place a paper towel on a microwave safe plate.  Place squash on paper towel and microwave for 5 minutes.  Flip squash over and microwave for 5 more minutes.  Remove from microwave and be careful because it will be really hot!  Slice the squash in half, long ways.  Remove seeds from both sides. Use fork to separate the squash so it looks like spaghetti.  Pour 1/2 cup of sauce into each boat.  Stir and coat squash.  Cover with cheese.  Broil until cheese is bubbly.

Skinny Chicken Parmesan


3 Large Chicken Breasts
1 cup of Italian Bread Crumbs
1 T of Butter ( I used low-fat)
2 T crushed pine nuts (you do not have to use these)
1/4 cup shredded parmesan cheese ( i didn't have any so i didn't use any this time)

Preheat oven to 450.  Defrost chicken in frozen.  Spray a cookie sheet with olive oil spray.  Cut chicken breasts in half.  Mix together cheese, bread crumbs and pine nuts.  Brush chicken breasts with butter. Dip in bread crumb mixture and cover entirely.  Place on pan.  Bake for 20 minutes.  Turn over and bake for 5 more minutes.

I served the chicken over sautéed spinach.  

Needless to say Dave LOVED the spaghetti squash this way!!

Lemon Caper Salmon and some wine....

For New Year's Eve Dave and I had a few fabulous friends over for dinner.  We had Lemon Caper Salmon, Roasted Asparagus and sautéed Brussels Sprouts with Mushrooms (of course).  The salmon was SOOOO good and so easy.

Here is the recipe!

Lemon Caper Salmon


Large Fresh Salmon Filet (I usually get the one from Costco and Dave and I can get 6-8 pieces from it)
1 Large Lemon
Marsala Wine (Cooking Wine)
Olive oil
Fresh Rosemary

Preheat oven to 350.  Lay out aluminum foil and place salmon on foil.  Make sure it is enough to fold over the salmon and make into a little boat.  Brush the top on the salmon with a little olive oil, salt and pepper.  Break up fresh Rosemary and spread on top of salmon.  You can use dried but I love the fresh. You can add as little or as much as you want.  Slice 4 slices of lemon.  Squeeze the juice from the remaining part of lemon over the salmon.  I just made 2 pieces so I split the amount of lemon juice per piece. If you are making more than 2 pieces buy enough lemons so each piece can have 2 lemon slices. Top each piece with 2 T of marsala wine and 1tsp of capers.  You can't really mess this up so feel free to add more or less.  Wrap salmon up in foil.  Don't wrap too tightly, more like a boat.  Place on cookie sheet and bake for 10-20 minutes depending on how done you like your salmon.  I like mine pretty done and flaky.  YUMMY!  If you want more of an exact recipe you can use this one from the Food Network!

So I have also been on a wine kick lately...I mean I guess I always am but I have been trying a lot of new stuff.  I used to be an only white wine drinker...because unless I am drinking coffee I like whatever I am drinking to be cold, however I am now starting to buy more and more red wine.  Here are a few of my new faves!

If I owned a vineyard this would obviously be the name I would choose.  I was so surprised how awesome this wine was!! I LOVE IT so much!

I obviously buy the wine because of the name or the bottle!  I really love cupcake wine and the Red Velvet is my favorite.  Their prosecco is pretty great too!

Just a little New Year Shopping!

So I love that in Jan. everything is on sale!  I did a little shopping today and caught some GREAT deals!

Let's talk about Dillard's!  Apparently they had the biggest sale ever on New Year's Day! Sadly, this girl didn't even change into normal clothes or leave her couch on New Year's Day #hangoverproblems I did catch some of the sale!  Love my new Gianni Bini finds!

Try Something New...

Nope, this most certainly is not a New Year's Resolution Post...I don't really do resolutions...but as I am trapped in my house because it is -600 degrees outside (a little exaggeration) I saw this awesome aerial gymnastic technique on television.  I am by far the most UNgraceful person ever...I am not really dainty or soft spoken.  So if I had a resolution, trying to be more graceful with a little softer approach could be it.  There is a place in Nashville called The Chrome Bar that has a class called FlyGym that looks awesome and you can be a beginner and go!  Check out these photos!  I am going to try it out soon and I will let you know how it goes!

They have a Circus School in I mean who knows....if the music business gets crazy maybe I can join the circus...JOKE...I think I could maybe be the clown :)

Speaking of trying something new...I am a sucker for new Mascara.  Amazing lashes are a true love of mine!  I used to get lash extensions even but after all the upkeep I just couldn't do it anymore!  Here are my TOP 3 Mascaras at the moment!

Thanks to Your Beauty Community for this comparison photo.  I really love this mascara so much!  So worth $24.00 and the good news is that Ulta should start carrying it soon in stores but you can get it online HERE!

I purchased this at Ulta over Thanksgiving Break!  I do love it...and I have to say it takes like 3 days to get it off.  It really does work.  It takes a bit of time but totally worth the $35.00.
