Skinny Chicken Parmesan and Cheesy Spaghetti Squash

So I was off work today for the holiday and I have to say it was a fabulous day off.  I went to Barry's this morning with a dear friend that is in town from NYC, went to Juice Nashville, the dermatologist and home for the rest of the day to relax.  Well I relaxed while folding clothes and cleaning the house.   I didn't have a clue what I was going to make for dinner but I had spaghetti squash that I had to cook before it went bad.  Dave is not much on Spaghetti made of spaghetti squash, he would much rather have noodles.  So I came up with Cheesy Spaghetti squash boats and Skinny Chicken Parmesan.

Cheesy Spaghetti Squash Boats


1 Medium Spaghetti Squash
1 Cup of Spaghetti sauce (I love Sweet Tomato Basil)
3/4 cup Shredded Parmesan and Mozzarella Cheese (they have a mixture at Target)

Poke holes with a fork all over the squash.  Place a paper towel on a microwave safe plate.  Place squash on paper towel and microwave for 5 minutes.  Flip squash over and microwave for 5 more minutes.  Remove from microwave and be careful because it will be really hot!  Slice the squash in half, long ways.  Remove seeds from both sides. Use fork to separate the squash so it looks like spaghetti.  Pour 1/2 cup of sauce into each boat.  Stir and coat squash.  Cover with cheese.  Broil until cheese is bubbly.

Skinny Chicken Parmesan


3 Large Chicken Breasts
1 cup of Italian Bread Crumbs
1 T of Butter ( I used low-fat)
2 T crushed pine nuts (you do not have to use these)
1/4 cup shredded parmesan cheese ( i didn't have any so i didn't use any this time)

Preheat oven to 450.  Defrost chicken in frozen.  Spray a cookie sheet with olive oil spray.  Cut chicken breasts in half.  Mix together cheese, bread crumbs and pine nuts.  Brush chicken breasts with butter. Dip in bread crumb mixture and cover entirely.  Place on pan.  Bake for 20 minutes.  Turn over and bake for 5 more minutes.

I served the chicken over sautéed spinach.  

Needless to say Dave LOVED the spaghetti squash this way!!
