Stir Fry Friday

I finally bought a wok at Home Goods last year, however I haven't used it very much because I always forget I have one.  I was at Trader Joe's and in their produce section that had fresh stir fry veggies.  I am a sucker for almost already prepared meals!  The veggies had snap peas, mushrooms, water chestnuts, broccoli, red peppers, baby corn, onions and I am sure I am missing a lot of others!



Stiry Fry

2 Chicken breasts- cubed
Olive Oil
Trader Joe's Asian Stir Fry Veggie Mix (any veggie mix of your choice is fine)
Low Sodium Soy Sauce
Salt and Pepper to taste

Pour a capful of olive oil in the wok and let it heat up.  Add Chicken and cook all the way through.  Add Veggies and cook.  I added spinach just because I had some that had to be used.  Add Soy Sauce.  I used quite a bit but just add enough to your liking.  Add Salt and Pepper to taste.  You can always serve this over brown rice or noodles.   Dave and I chose to use our calories for cookies later!
