The Best Energy Bites Ever

Seriously, these are so amazing!  A friend from the office gave me this recipe and now I make them every week!  Dave loves them too!  The ingredient photo below is from the first time I made them.  I have since tried them with Gluten Free Oats and Unsweetened Coconut flakes and they are amazing! You can make them as healthy as you want...well that's the point...but if you wanted to dip them in chocolate and eat them like a truffle I am sure that would be fantastic too!


1 cup oatmeal
½ cup peanut butter (or other nut butter) I use almond butter and peanut butter.
⅓ cup honey
1 cup coconut flakes (get the unsweetened coconut flakes)
½ cup ground flaxseed (I found this at Publix)
½ cup mini chocolate chips
1 tsp vanilla

Mix everything above in a medium bowl until thoroughly incorporated.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls and enjoy. Store in an airtight container and keep refrigerated for up to one week.
